I love this book sooo much! The hubs got me a wonderful gift this past Mother’s Day; an Electric Pressure Cooker. Needless to say, I was very hesitant to try this or any other type of pressure cooker.When I was a kid, my mom used one that wiggled and jiggled all over the stove, and was so loud that you couldn’t hear the TV over it. And, you were horrified to walk through the kitchen for fear it would explode all over you and the kitchen and you’d be burned alive. I am here to tell you, if that is the case, you’ll be amazed at how far pressure cooking has come.When I first saw Slow Cooker Cookbook, I had only used my new pressure cooker for the things like my mother used her old stainless steel, stove-top pressure cooker for. You know, pinto beans and pot roasts only.I am here to tell you today that Slow Cooker Cookbook is a must-have for anyone who owns an Instant Pot. This books shares how to use the Instant Pot, what to cook in it, and oh my, the recipes are delicious and easy to follow. The book is filled with beautiful photos, an introduction to the Instant Pot, a section on how to convert traditional recipes, suggestions for useful tools that compliment the Instant Pot, and a troubleshooting and FAQ section.With an Instant Pot, you don’t have to hover over your pressure cooker and watch the gauge like my Mom did. And, thank goodness! I don’t have that kind of time or the energy after a long day at work. With the Instant Pot, I can set it and walk away. I can help the kids with their homework, pick up a little house, or just relax while dinner is cooking. It’s amazing!This cookbook includes seven chapters of recipes that include breakfast, beans and grains, soups and chilis, poultry, beef and pork, vegetables and side dishes, and desserts. There is also a section for suggested pantry items and a cook chart.I am proud to say that I have now tried recipes such as Brown Butter Steel-Cut Oatmeal, Borracho Beans, Rice, Barley with Mushrooms and Sage, and New York Cheesecake. Yes! Cheesecake!! Next to try on my list is Unstuffed Peppers and Lemon-Honey Poached Pears with Whipped Greek Yogurt. These recipes are delicious and simple to follow. The ingredients are mostly common ingredients that are in a well stocked pantry, and the ones that I don’t have readily on hand can be found in most grocery stores.I highly recommend anyone with an Instant Pot should have this book. If you are like me and already have the Holidays on your mind, I am thinking this would also be a fantastic gift! fantastic!
